Spiced Apple Pecan Oatmeal

I’m back again with another simple recipe for you all. I have gone in and out of blogging, but continue to document all my cooking on my personal Instagram. It’s hard to find something for meal prep that is exciting, and can also last for a few days in the fridge. This oatmeal recipe is so simple and easy, you will leave the pre-packaged oatmeal behind. All the ingredients are inexpensive (likely things you already have laying around) and the result is so delicious. Cook this on Sunday, and you will have enough for about 3 days. All you have to do is heat it up in the microwave in the morning & enjoy. You can even pour a little milk into the oatmeal after it is warmed up, if that is your preference.

Ingredients:

  • 2 tablespoons butter
  • 1 medium to large apple, diced
  • 3 tablespoons brown sugar, packed
  • 1 rounded teaspoon cinnamon
  • 1/4 rounded teaspoon ground ginger
  • 1/4 rounded teaspoon ground nutmeg
  • 1/8 rounded teaspoon ground allspice
  • 1 large pinch fine sea salt
  • 1 cup old fashion oats
  • 2 cups water
  • 1/2 cup roughly chopped pecans

Directions:

  1. In a saucepan, melt the butter over medium-high heat. Once melted, add the apples, brown sugar, salt and spices. Stir to get an even coating of the sugar and seasoning on the apples. Cook the apples until they begin to soften, about 3-4 minutes, stirring occasionally.
  2. Pour the oats into the pan, followed by the water, and stir to incorporate. Turn the heat up to high and bring the water to a low boil. Once the boil is reached, reduce the heat to medium and cook the oats for about 5 minutes, stirring occasionally, until pretty much all the liquid is absorbed, and the oatmeal is thickened.
  3. Remove the pan from the heat. Stir in the pecans. Allow to sit for 1-2 minutes before serving.
  4. Enjoy!
