Baked Kale Chips

Over the past weekend, my boyfriend and I stopped by a farmers market and picked up some fresh produce. He wanted to get kale and I looked at him like he had four heads. I kind of have an unfair bias towards kale. It’s this green superfood that I don’t imagine ever tasting good. Neither of us had ever cooked with kale before, and I had no idea what to do with it, but he suggested we make baked kale chips. I’ve had kale chips before that I’ve bought at the store, but never really liked them. These baked kale chips, though, are delicious! They’re a great quick snack and super easy to make.

All you need are a few simple ingredients: extra virgin olive oil, seasoned salt (or just salt), pepper, and I added parmesan cheese. You can put anything you want on the chips, so there are hundreds of different types of kale chips that you can make. The amount of seasonings I list are just suggestions, you can really put however little or much seasoning on your kale chips that you want. The key is to make sure that they are coated with extra virgin olive oil so they can get nice and crispy in the oven.

Ingredients:

  • 1 bunch of kale, leaves trimmed from the stem
  • 2 tbsp of extra virgin olive oil (or enough to coat all of the kale you are baking)
  • 2 tbsp of freshly grated parmesan cheese
  • Seasoned salt and pepper, to taste
  • Any other seasonings you like (other seasoning suggestions: garlic powder, onion powder, or crushed red pepper flakes)

Directions:

  1. Preheat the oven to 350°F.
  2. Cut away the leaves of the kale from the stem. Rinse the kale and dry off with paper towels.
  3. In a large bowl, put all the washed kale and pour in the extra virgin olive oil. Toss the kale so that all of the leaves are coated with the oil. Add more oil is necessary.
  4. Sprinkle the kale with the seasoned salt, pepper, and parmesan cheese (saving some parmesan cheese to sprinkle on the kale once it is on the baking sheet).
  5. Line a baking sheet with parchment paper. Lay the kale out on a baking sheet, trying to spread it out as flat as possible. Sprinkle a little bit of parmesan cheese over the kale (you can also add any additional seasoning if you’d like).
  6. Put the kale in the preheated oven for approximately 10-15 minutes. After this time, check the kale for crispiness. If some is still a little soft, removed the kale that is sufficiently cooked, and return the soft kale to the oven and continue baking in intervals of 3-5 minutes until it is crisp. The key is to check on the kale every so often, as to not over cook it.
  7. When finished, let the kale cool off for a few minutes, and enjoy!
